Yes you can play a live set and record it to a midi track if you have the Juno Gi in live set mode and 2 midi tracks record enabled in Logic for channels 1 & 2 ( upper and lower )

Thats the purpose behind all the new videos ill be doing, short and very focused on one thing.

Ive never heard of the Fantom G "de-emphasizing" samples when you import via USB on a Mac or PC. Again adding "emphasis" to your samples is a personal choice.

@ Jabberwocky - Not sure what you mean , if your referring to "emphasis" thats a post editing function you can do to bring out certain frequencies of your samples but it is not part of the " Sample Set " creation process.

Im sure for most vets this is nothing new but for alot of new guys who have confusion as to how to do this properly, this may help.

Brand new plug-in called Metrum , great add-on for a Fantom G or MV , anything you can sample on. Makes a great sampling source for your hardware.
