I think there is no way of expanding the memory. But you can use CF cards to create complete new projects.

It's just marketing. I don't see any reason why you should be afraid. The only thing with pedals is the polarity that can be different but I have never been in trouble with that.

You could also opt for something like the MidiHub. A fully programmable midi interface (no computer needed after programming) that can route from anything to anywhere based on almost anything.

CC 64 = Hold1, as used with sustain pedals. Values 0 to 63 = off, 64 to 127 is on.

I only have a V-Synth v2 so I'm not sure but I guess the GT has different factory sounds. If I recall well, the GT basically is a double V with some extra features so it would be strange they just kept (all) the "old" V sounds.

About Q1; I remember that I came across the same problem a long time ago already but I don't know if I found a solution inside the V-synth. It looks normal that a (standard) microphone input will be monaural so I think you will have to split that mic output into L/R with an adapter (cable). Or feed ...

You are right in saying that Roland has a history of making promises on future enhancements without ever committing to them. The same occurred with the V-synth. Only two extension cards were made for that, right from the start and then... nothing. But that doesn't mean that the V-synth is worthless....

The V-synth service manual (to be found somewhere on this forum, uploaded by a valued member) has two numbers: (I don't know which one to use)
