I believe what you are referring to is that the organ presets are given the same key range as a Hammond console with the 16' drawbar as fundamental. To move up an octave, go into Patch Edit/Common, set Octave Shift to +1, and save to a user location.

It's the same process as described by cgreene above. If you go to the top of your sequence you can change the beat (time signature) of the whole thing.
