Can I use multiple patches with multiple midi channels? For example, MIDI channel 1 uses patch 10, MIDI channel 2 uses patch 8, etc.?

No, the SH-201 sends and receives only on one (or on all for that matter) midi channel, even when you are in split mode, only one midi channel is used for controlling both sounds.
