On my RD700SXs I really liked being able to, on the fly, hold down two Tone Select buttons to get both tones at once - eg., Piano and Pad.
Just got an RD700NX and that doesn't work anymore.
Am I missing something - it was really handy :-)

I don't think the NX has that feature. But piano and el. piano sounds are usually set up with a string and a pad sound as two of the layers already, you just need to press a LAYER SWITCH button. Or press SPLIT to get a bass/piano split, etc.
To change the tone for a layer, the quickest way is to hold SHIFT and press one of the LAYER SWITCH buttons, that gets you into layer edit mode with that layer selected. You can then select the tone category, etc.
