Just a last minute question before I buy a used G8. I want to use the G8 as sound source for both the G8 itself and a second keyboard. In other Words, I want to be able to play the G8 and simultaneously play it via MIDI (EX5 on top of it). I´m thinking 2-3 patches played on the G8, and the 2-3 from the EX5.
Is that done with Studio or Live set, and can I control all the individual patch volumes with the sliders?

Yes, you can play the Fantom with its own keyboard and an external keyboard at the same time.
Either Studio Mode or Live Mode will work.

Great news! One of the main reasons for buying a G8 is the possibilities during live performances, to control patches played on the G8 and sounds on it from another keyboard. The G8 it is!
