Is Jupiter-80 multi-timbral?
I skimmed the manual and didn't find whether the JP-80 could be used as a multi-timbral sound source. I didn't see the typical "performance mode". Am I missing something?

See page 85 of the owners manual. Receive channel can be set for each of the 4 parts.

The jp80 is multitimbral in two different ways.
You can have up to 10 different voices layered or split across the keyboard.
The most upper level is the registration which consists of 4 part. 2 of those 4 parts are reserved for a liveset which in turn itself consists of up to 4 parts which can be layered or split.
That makes 8 parts just with the (two) livesets and the percussion and solo part.
On the other side, if you think about multitimbrality in a studio environment, you have just 4 parts. Those which makes the registration. Each part (percussion, lower liveset, upper liveset, solo) can have its own receive midichannel.
Depending on where and how you need it, the jp80 is 10 or 4 part multitimbral.

4 parts max on separate midi channels. You can't assign different midi channels to tones within a single live set.
